Creole Sauce
- 1/4 cup Canola Oil
- 1 cup diced Celery
- 2 cups diced Onion
- 1 cup diced Green Bell Peppers
- 1 1/2 teaspoons minced Garlic
- 1 tablespoon diced Shallots
- One 28-ounce can Diced Tomatoes
- 1 1/2 teaspoons Cajun Seasoning store bought or homemade, of choice, plus more, to taste
- 1 teaspoon Coarse Salt
Creole Rice
- 2 tablespoons Canola Oil
- 1 cup Rice
- 1 cup Fish or Chicken Stock store bought or homemade, of choice
- 1 cup Creole Sauce store bought or homemade, of choice
Jambalaya
- 1/4 cup Canola Oil
- 1 cup sliced Andouille Sausage
- 1 cup sliced smoked Chicken Sausage
- 16 medium Shrimp peeled deveined and tails removed
- 1 teaspoon Cajun Seasoning store bought or homemade, of choice
- 2 cups Creole Sauce store bought or homemade, of choice
- Prepared Creole Rice
- Salt and freshly ground Black Pepper to taste
- 1/3 cup sliced Green Onions
Creole Sauce
Add canola oil to a large saucepan.
Place saucepan over medium heat and heat until hot and shimmering.
Add celery, onion and green bell pepper. Sauté for 4 minutes, until soft and fragrant.
Add garlic and shallots. Continue to sauté for 2 - 3 minutes.
Add diced tomatoes and Cajun seasoning. Bring to a simmer. Cover, and reduce heat to low. Simmer for 30 minutes.
Taste. Add salt and additional Cajun seasoning, to taste.
Set aside and keep warm until ready to use.
Creole Rice
Add canola oil to a medium saucepan.
Place saucepan over medium heat and heat until hot and shimmering.
Add rice. Cook, stirring constantly, for 4 minutes, until rice has a light brown color.
Add fish or chicken stock and creole sauce. Stir until fully mixed.
Increase heat to high and bring to a boil. Cover and reduce heat to low. Cook for 15 minutes.
Turn off heat. Let rest for 10 minutes.
Set aside and keep warm until ready to use.
Jambalaya
Add canola oil to a another large saucepan.
Place saucepan over medium heat and heat until hot and shimmering.
Add Andouille and chicken sausages. Cook for 5 minutes, until browned.
Add shrimp. Cook for 3 - 4 minutes, until just pink. Do not overcook.
Add Cajun seasoning.
Stir in 2 cups prepared creole rice and 2 cups prepared creole sauce. Fold to mix. Add additional rice and/or sauce, if needed, to reach desired consistency. Taste. Add salt and pepper, to taste.
Pour into a serving dish.
Garnish with sliced green onions.
Serve hot.
