Ingredients

  • One 10 to 12-pound boneless Prime Rib Beef Roast

Rub

  • 2 tablespoons Cumin Seeds
  • 2 tablespoons Chili Powder
  • 2 tablespoons Paprika
  • 1 tablespoon Mustard Seeds
  • 1 tablespoon Coriander Seeds
  • 2 tablespoons Kosher Salt
  • 2 tablespoons packed Brown Sugar
  • 1 tablespoon Garlic Salt
  • 2 teaspoons Cayenne

Instructions

Rub

  • Place a large sauté pan over medium high heat. Add cumin seeds, chili powder, paprika, mustard seeds and coriander seeds. Toast, shaking the pan occasionally, until the spices start to gently smoke, about 2 to 3 minutes. Remove from heat. Allow to cool.
  • Transfer mixture to a mortar or coffee grinder. Add salt, brown sugar, garlic salt and cayenne pepper. Grind the mixture coarsely. Pour into a sealable jar or container and set aside.

Prime Rib

  • Trim nearly all of the fat from the prime rib.
  • Using your gloved hands, spread the spread the rub evenly over all of the roast.
  • Wrap tightly with plastic wrap. Place in refrigerator and allow to marinate for at least 3 hours or overnight.

Grill

  • Build a fire on one side of your grill.
  • Unwrap prime rib.
  • Place prime rib, fat side up, over medium indirect heat. Grill for about 2 1/2 hours.
  • Remove roast when it reaches the desired doneness (See chart below) and place on a large platter.
  • Loosely cover meat with aluminum foil. Set aside and allow to rest for 30 minutes before slicing.
  • Cut into 1/2 to 1-inch thick slices.
  • Serve warm.
