Vanilla Glaze
- 1 cup Water
- 1 tablespoon Sugar
- 1 tablespoon Cornstarch
- 2 tablespoons Butter
- 2 teaspoons Vanilla Extract
- 1 pinch Salt
Biscuits
- 2 cups Bisquick Baking Mix
- 1/2 cup Water
- 1/2 cup Sugar
- 2 tablespoons Raw Sugar
To Assemble and Serve
- 3 scoops French Vanilla Ice Cream
- 1 tablespoon Powdered Sugar
- 1/2 cup Strawberry Purée to taste
- 3 whole Strawberries cut into quarters
- 1 cup Whipped Cream
- 1 sprig Mint
Vanilla Glaze
Add 1 cup water to a small saucepan. Place over medium heat and bring to a boil.
In a cup or small bowl, combine 1 tablespoon sugar and cornstarch. Blend well.
Add sugar and cornstarch mixture to boiling water. Reduce heat to medium, stirring constantly and cook until thickened. Remove from heat.
Add butter, vanilla and salt. Stir to mix until butter is melted.
Biscuits
Preheat oven to 350°F.
Add biscuit mix, 1/2 cup water and 1/2 cup sugar. Mix until a soft dough forms.
Scoop 3 ounces of dough into cups of a lightly greased muffin tin. Flatten tops with wet fingers.
Sprinkle tops with raw sugar.
Place in preheated oven and bake until golden brown.
Assemble and Serve
Coat a shortcake plate with 3 - 4 tablespoons, give or take depending on the size of your plate, prepared vanilla glaze.
Cut 3 prepared biscuits in half. Lay bottoms over vanilla drizzle.
Place one small scoop ice cream on each biscuit bottom.
Place biscuit tops over ice cream.
Sprinkle powdered sugar on top.
Drizzle with strawberry purée.
Sprinkle with strawberry quarters.
Add whipped cream, as desired.
Garnish with a mint sprig.
Serve immediately.
