Into a large mixing bowl, add
Pour the rice vinegar, white vinegar and chili sauce (Add any amount of chili sauce you desire - depending on how hot you want the final sauce to be. You might start with our suggested 2 tablespoons - You can add more later.) Stir to blend well.
Add sugar, minced garlic, crushed red chili peppers, onion powder and garlic powder to the bowl. Whisk all the ingredients for 5 minutes, or until the sugar dissolves into the vinegar.
Taste. Add more chili sauce, if desired. Add salt and pepper, to taste, only if needed and desired.
Store, covered, in the refrigerator, for at least 30 minutes, to allow the flavors to meld, or until ready to in your recipe.
