Ingredients

  • Peanut Oil for frying
  • 1 1/2 pounds Yukon Gold Potatoes
  • 1/2 teaspoon Salt
  • Pico de Gallo, to serve (See Box Below for Links to our Recipes)
  • Applebee's Queso Blanco, to serve (See Box Below for Recipe)

Instructions

  • Pour oil into a deep fryer. Preheat oil to 375°F.
  • Peel potatoes.
  • Slice potatoes as thinly as possible with a mandolin, if you have one, or your thinnest knife.
  • Place the slices directly into cold water after slicing and leave until you are ready to fry them.
  • Remove slices from water, allowing excess to drip off, about 8 - 10 at a time and very carefully drop into hot oil. Fry for about 3 to 4 minutes.
  • When potato slices are golden brown, remove to a paper towel-covered plate to drain.
  • Sprinkle with salt.
  • Continue frying remaining slices in batches until all are done.
  • Serve hot with pico de gallo and Applebee's Queso Blanco.
