Ingredients

  • 2 large Flour Tortilla
  • 6 ounces Lobster Meat cut in small chunks
  • 4 ounces Black Beans rinsed and drained
  • 1/2 cup Cheddar Cheese shredded
  • 1/2 cup Jack Cheese shredded
  • 1/2 cup Queso Fresco Cheese crumbled
  • 2 tablespoons Ortega Chilies chopped
  • 2 tablespoons Pepitas (Roasted Pumpkin Seeds)
  • 2 tablespoons Guacamole store bought or homemade
  • 2 tablespoons Sour Cream
  • 2 tablespoons Salsa store bought or homemade
  • Cilantro chopped, to garnish

Instructions

  • Lay out both tortillas flat on a work surface.
  • Place 3 ounces lobster meat on 1/2 of each tortilla.
  • Place 1/2 of all remaining ingredients atop lobster meat.
  • Fold empty side of each tortilla over to cover filling.
  • Preheat a large heavy-duty skillet over high heat.
  • Reduce heat to medium and place one folded tortilla into hot skillet. Cook until until lightly browned. Turn over and grill other side. (See Note above this Box)
  • Remove tortilla from skillet and place on a cutting board.
  • Repeat with second quesadilla.
  • Cut each quesadilla into four pieces.
  • Place on a serving plates with a tablespoon each of guacamole, sour cream and salsa.
  • Garnish with chopped cilantro.
