Preheat oven to 250°F.
Rub ribs, on both sides, with a generous amount of salt and pepper or BBQ seasoning.
Pour a small amount of Bahama Breeze Rum and Coke BBQ Sauce into a cup or small bowl.
Brush ribs with this sauce. Discard remaining sauce in the cup or bowl when done. (This is to keep the larger portion of sauce from touching the brush that touched the raw meat when you dip the brush.)
Place both racks of ribs on a sheet tray with the bones facing up.
Add about 1 cup of water to tray.
Wrap ribs and tray tight with plastic wrap. Then wrap ribs and tray tight with aluminum foil.
Place wrapped tray into preheated oven set and cook for 2 to 2 1/2 hours or until the ribs are tender.
When tender remove from oven. Unwrap foil and plastic wrap.
Brush ribs with rum and Coke BBQ sauce.
Place on hot grill and cook until they have a nice char, brushing frequently while grilling and before removing the ribs from the grill.
Serve with more Bahama Breeze Rum and Coke BBQ Sauce, to dip.
