Ingredients

  • 4 Catfish Fillets (about 1 1/2 pounds total)
  • 1/2 cup Yellow Cornmeal
  • 3 tablespoons All-Purpose Flour
  • 1 1/2 teaspoons Salt
  • 1/4 teaspoon ground Red Pepper
  • Vegetable Oil for frying
  • Fresh Parsley Sprigs for garnish

Instructions

  • Rinse catfish. Pat dry with paper towels.
  • In shallow dish, combine cornmeal, flour, salt and red pepper. Mix well.
  • Dip fish into cornmeal mixture. Turn and press to coat fully.
  • Pour 1-inch of oil in large heavy skillet. Place over medium heat.
  • When oil is hot and shimmering, (about 375°F on deep fry thermometer) gently place 2 pieces of breaded catfish in skillet. Fry 4 to 5 minutes, turning over once, until golden brown on the outside and fish flakes easily when tested with fork. Remove to a paper towel-covered plate to drain.
  • Allow temperature of oil to return to 375°F, and fry remaining 2 pieces the same way.
  • Serve hot with Tartar Sauce, Hush Puppies and Cole Slaw! (See Box Below)
