Ingredients
3/4cupsInstant Potato Flakes
1cupTartar Saucestore bought or homemade (See Box Below for Links to Recipes), of choice
1/4cupsnipped fresh Chives
2teaspoongrated fresh Lemon Peel
Four 6-ounce each Flounder Fish Fillets
Instructions
Preheat oven to 450°F.
Grease wire rack. Set rack in a jelly-roll pan.
To a medium bowl, add tartar sauce, chives and lemon peel. Whisk to mix well.
Remove 1/2 cup of mixture and reserve for serving.
Place fish fillets on a plate or work surface.
Spread each of the fillets with 2 tablespoons of the remaining tartar sauce mixture.
Sprinkle each with 3 tablespoons potato flakes.
Place fillets on rack.
Place in preheated oven. Bake 8 to 10 minutes or until fish turns opaque and top is golden.
Serve with reserved tartar sauce and other sauces of choice.
