Ingredients

Blue Cheese Sauce

  • 1/2 cup Milk
  • 3 ounces Cream Cheese
  • 1/4 cup Blue Cheese Crumbles

Chips

  • 1 bag Kettle-Style Potato Chips store bought or homemade (Seriously, store bought are fine for this. Experiment with flavored chips, like BBQ or Sour Cream and Onion, if you like, but we have found that we like simply Salted the best.)
  • 2 to 4 or more tablespoons Blue Cheese Crumbles
  • 3 strips cooked crisp Bacon crumbled
  • 2 tablespoon fresh Chives or Green Onions chopped

Instructions

Blue Cheese Sauce

  • To a medium sauce pan add cream cheese and milk.
  • Place pan over medium low heat. Cook until the cream cheese begins to soften and melt.
  • Add 1/4 cup blue cheese crumbles. Stir with a rubber spatula, pressing down on the cheeses to help them melt into the sauce. Increase heat to medium, if needed.
  • When both cheeses have have melted and sauce is smooth, increase heat to medium high and bring the sauce to a simmer. Simmer until thickened, stirring constantly to prevent burning.
  • Remove from the heat and set aside briefly.

Assemble

  • Place a handful of kettle chips on a platter, spreading them to cover the platter in a somewhat single layer.
  • Drizzle 2 to 3 tablespoons, or more depending on the size of your platter or if desired, prepared warm blue cheese sauce over the chips. You do want to drown the chips, but there should be a nice dollop or two on most every chip.
  • Stack a few more chips on top of the first layer, piling them into a nice mound in the center. (The picture above, of an actual serving of Gordon Biersch House Chips, looks a little "light" to us. This is your party - Go ahead and pile them chips HIGH! - Alton)
  • Drizzle chips with more blue cheese sauce, to taste.
  • Sprinkle with more blue cheese crumbles, bacon and chives or green onion.
  • Serve immediately while cheese is warm.
