Ingredients

  • 8 Street Taco-Sized Flour or Corn Tortillas
  • 1 pound prepared Pulled Pork BBQ
  • 1 medium Red Onion chopped roughly
  • 1 bunch fresh Cilantro chopped
  • Mexican or Tex-Mex-Style Hot Sauce of choice
  • Creamy Tex-Mex Sauce Recipe below
  • 1 Lime cut into wedges, to serve

Instructions

  • Toast tortillas, one at a time, in a skillet over low heat. Flip to toast both sides. Just toast lightly - do not toast long enough for them to get dry and hard.
  • Place 2 tortillas on a serving plate.
  • Place about 2 tablespoons hot or warm pulled pork in a line across middle of each tortilla.
  • Scatter a bit of onion and cilantro, to taste, over pork.
  • Drizzle hot sauce and Creamy Tex Mex Sauce, to taste, over all.
  • Serve immediately with lime wedges.
