Ingredients

  • 1 pound Ground Beef
  • 1/2 cup chopped Onion
  • One 1 1/4-ounce envelope Taco Seasoning or 1 1/4-ounce homemade Taco Seasoning of choice
  • One 4-ounce can Chopped Green Chilies drained
  • 1 1/4 cups Milk
  • 3/4 cup Bisquick Baking Mix
  • 3 Eggs
  • 2 Tomatoes sliced
  • 1 cup freshly shredded Monterey Jack Cheese or Cheddar Cheese or One 1-cup bag Mexican Blend or Taco Blend Cheese of choice
  • 1/2 - 1 cup Sour Cream to top or serve
  • 2 Tomatoes diced, to top or serve
  • 1 Onion chopped small, to top or serve
  • 2 cups shredded Lettuce to top or serve

Instructions

  • Preheat oven to 400°F.
  • Grease a 10-inch baking dish or 10 x 1 1/2-inch pie plate. Set aside.
  • Place beef and onions in a large skillet.
  • Place over medium heat. Cook, stirring and crumbling the beef, until beef is browned and onions are fragrant. Remove from heat and drain grease.
  • Stir in taco seasoning.
  • Spread beef mixture evenly in prepared dish or pie plate.
  • Sprinkle drained green chilies evenly over top of beef.
  • In a mixing bowl, add milk, Bisquick Baking Mix and eggs. Beat until smooth - about 15 seconds with a mixer or 1 minute by hand.
  • Pour Bisquick mixture over beef and chilies.
  • Place in preheated oven. Bake for 25 minutes.
  • Remove from oven. Top with sliced tomatoes. Sprinkle evenly with shredded cheese.
  • Return to hot oven and bake until a knife inserted between center and edge comes out clean, about 8 - 10 minutes longer.
  • Remove from oven and let rest for 5 minutes.
  • Top pie with (or serve on the side for your guests to top as they please) sour cream, diced tomatoes, chopped onions and shredded lettuce, if desired.
  • Serve hot.
