Wipe mushrooms with a damp cloth until all dirt is removed. Place cleaned mushrooms on a paper towel-covered plate and allow to dry for about 3 minutes before adding them to the hot oil.
Place olive oil in a skillet. Place skillet over high heat and heat until oil is hot and shimmering.
Carefully add mushrooms to skillet. Sauté, stirring occasionally with a wooden spoon, until lightly browned and most of the water is reduced out of mushrooms, about 10 minutes.
Reduce heat on skillet.
Add garlic, onion and thyme. Sauté for 1 minute, stirring constantly to keep garlic from burning.
Add steak spice.
After the liquid boils, turn heat on skillet down.
Add butter. Simmer until thickened, about 3 - 5 minutes.
Serve hot as a side or topping for any dish you like.
