Ingredients

  • 8 Roma Tomatoes washed and diced
  • 1/2 Red Onion finely diced about 1/2 cup
  • 2 tablespoons chopped Cilantro
  • 1 JalapeƱo seeded and finely chopped (use 2 or more if you like it more spicy)
  • Freshly squeezed Juice of 1 Lime
  • Salt and freshly ground Black Pepper to taste

Instructions

  • In a medium bowl, combine all ingredients.
  • Taste. Add more jalapeƱos and/or salt and pepper, if needed.
  • Place into jar or plastic container. Seal and refrigerate for at least 3 hours before serving to allow the flavors to meld.
