Preheat oven to 350°F.
Prepare Claim Jumper Sour Cream Chive Dip according to recipe below. Set aside.
Brush potato shells with melted butter. Sprinkle lightly with seasoned salt, to taste.
Place shells, skin-side down, on a baking sheet.
Place in preheated oven and bake for 15 to 20 minutes, until crisp, but not dry and hard.
Remove sheet from over. Sprinkle cheese into each baked shell.
Sprinkle bacon and 1/2 of onion into all shells but 1.
Place tray back in oven. Heat until cheese is melted and bubbling. Remove from oven.
Place filled shells on a serving plate. Pile on top of each other, if desired.
Fill remaining shell (the one with only cheese in it) with a healthy dollop of Claim Jumper Sour Cream Chive Dip. Sprinkle with 1 teaspoon Chives. Place on top of filled potatoes (See photo above). (Alternately, of course, fill all potatoes and serve Claim Jumper Sour Cream Chive Dip on the side in a small bowl.)
Serve immediately, hot.
