Ingredients

  • 2 cold Baked Potatoes
  • 1/4 cup Cooking Oil
  • 2 teaspoons Lawry's Seasoned Salt to taste
  • 1/2 cup Ham diced small
  • 1/4 cup Mushrooms sliced and sauteed in Butter
  • 1/2 cup Swiss Cheese shredded
  • 2 Green Onions chopped, to garnish

Instructions

  • Leaving the skin on, dice the potatoes into small cubes.
  • Pour oil into a large frying pan that has a fitting lid. Place over medium heat.
  • When oil is hot and shimmering, add potatoes. Season with seasoning salt. Cook, stirring for 1 - 2 minutes to slightly brown potatoes.
  • Add prepared ham and mushrooms. Stir to mix.
  • Sprinkle Swiss cheese over top.
  • Cover with lid. Simmer for 6 - 8 minutes, until the potatoes are warm and cheese has melted.
  • Transfer contents to 2 serving plates. Scatter a bit of green onion over.
  • Add 2 IHOP Buttermilk Pancakes and serve hot.
