Leaving the skin on, dice the potatoes into small cubes.
Pour oil into a large frying pan that has a fitting lid. Place over medium heat.
When oil is hot and shimmering, add potatoes. Season with seasoning salt. Cook, stirring for 1 - 2 minutes to slightly brown potatoes.
Add prepared ham and mushrooms. Stir to mix.
Sprinkle Swiss cheese over top.
Cover with lid. Simmer for 6 - 8 minutes, until the potatoes are warm and cheese has melted.
Transfer contents to 2 serving plates. Scatter a bit of green onion over.
Add 2 IHOP Buttermilk Pancakes and serve hot.
