Ingredients

  • 1 pound leftover Bob Evans Beef Pot Roast or other Beef Pot Roast shredded
  • 1 cup Beef Broth or Water from cooking the Roast
  • 1 can Cream of Mushroom Soup
  • 1 cup Sour Cream
  • Cooked Egg Noodles for serving

Instructions

  • Place a large sauce pan over medium heat.
  • Add beef and beef broth or cooking water. Cook stirring until warm.
  • Stir in cream of mushroom soup. Bring mixture just to a boil - then reduce heat.
  • Allow to simmer as you prepare your noodles,according to the directions on the package.
  • When almost ready to serve, stir in the sour cream. Allow to simmer until hot. Do not boil, the sour cream may break and curdle.
  • Place noodles on to serving plates or shallow bowls. Spoon stroganoff over noodles.
  • Serve with additional sour cream on the side, if desired.
