Ingredients
2tablespoonsButter
Vegetable Oil or Olive Oil
1poundBaby Red Potatoesdiced small
1Green Bell Pepperseeded and chopped
1medium Onionchopped
Salt and freshly ground Black Pepperto taste
1cupLeftover Pot Roast (See Box Above for a link to our Bob Evans Pot Roast Recipe)
4Eggscooked to your preference (scrambled, sunny side up, over easy, etc.)
2Green Onionssliced, to garnish
Hot Sauce or Salsaof choice, if desired, to serve
Instructions
Place butter into a large skillet. Place over medium heat to melt butter. Do not burn or scorch.
When butter is hot, add potatoes. Cook until they just begin to brown, about 10 - 15 minutes.
Add prepared bell pepper and onion. Season with salt and pepper, to taste. Cook until vegetables are crisp tender.
Stir in leftover pot roast and heat through.
Place on 2 serving plates and top each with eggs cooked to preference. Serve hot, sprinkled with sliced green onions and hot sauce or salsa on the side.
