Ingredients

  • 2 tablespoons Butter
  • Vegetable Oil or Olive Oil
  • 1 pound Baby Red Potatoes diced small
  • 1 Green Bell Pepper seeded and chopped
  • 1 medium Onion chopped
  • Salt and freshly ground Black Pepper to taste
  • 1 cup Leftover Pot Roast (See Box Above for a link to our Bob Evans Pot Roast Recipe)
  • 4 Eggs cooked to your preference (scrambled, sunny side up, over easy, etc.)
  • 2 Green Onions sliced, to garnish
  • Hot Sauce or Salsa of choice, if desired, to serve

Instructions

  • Place butter into a large skillet. Place over medium heat to melt butter. Do not burn or scorch.
  • When butter is hot, add potatoes. Cook until they just begin to brown, about 10 - 15 minutes.
  • Add prepared bell pepper and onion. Season with salt and pepper, to taste. Cook until vegetables are crisp tender.
  • Stir in leftover pot roast and heat through.
  • Place on 2 serving plates and top each with eggs cooked to preference. Serve hot, sprinkled with sliced green onions and hot sauce or salsa on the side.
