Ingredients

Wings

  • 8 large Chicken Wings
  • 1/2 cup Virgil’s Dry Rub, or other Wing or BBQ Rub, of choice
  • Virgil's Real Barbecue BBQ Chicken Wings Sauce (Recipe Below)
  • Virgil's Real Barbecue Blue Cheese Dip (See Box Below for a Link to this Recipe)

Marinade

  • 1/2 cup Vegetable Oil
  • 1/2 cup Hot Sauce of choice
  • 4 tablespoons Virgil’s Dry Rub, or other Wing or BBQ Rub, of choice
  • 4 tablespoons granulated Garlic
  • 4 tablespoons granulated Onion
  • Freshly squeezed Juice of 1/2 Lemon about 1 ounce

Instructions

2 Days Before Serving

  • In a large mixing bowl, combine all marinade ingredients. Mix well.
  • Place wings in a large container with a sealable lid.
  • Pour marinade mixture over the wings. Toss until the wings are thoroughly coated.
  • Cover and place in the refrigerator for 2 days.

1 Day Before Serving

  • Prepare Virgil's Real Barbecue Blue Cheese Dip according to recipe below.

Day of Cooking and Serving

  • Preheat grill or smoker to 245°F.
  • Remove wings from marinade, allow excess to drip off. Lay wings out on a sheet pan. Wipe away any excess marinade.
  • Sprinkle liberally with the dry rub - Turn wings over to coat completely.
  • Position wings on hot grill away from the direct heat of the coals or burners. Add hickory to the smoker, or hickory chips on the coals or gas burners.
  • Maintain the 245°F temperature and cook wings for about 3 hours, flipping every 30 minutes. Wings are done when their internal temperature reaches 165°F.
  • While the wings are cooking, make Virgil's Real Barbecue BBQ Chicken Wings Sauce according to the recipe below. Keep warm until wings are done cooking.
  • Remove the wings from the smoker or grill.
  • Place half of the wings into a medium bowl. Cover with about 1/2 of the prepared sauce. Toss to coat. Remove wings to a serving platter and repeat with remaining wings and sauce.
  • Serve hot with Virgil's Real Barbecue Blue Cheese Dip on the side.
