Ingredients

  • 4 - 6 pounds Beef Chuck cut into 3-inch cubes
  • 1/2 cup chopped Cilantro
  • 2 tablespoons Kosher Salt
  • 1/3 cup Garlic chopped
  • 2 ounces Ancho Chilies stems removed
  • 3 cups Yellow Onions quartered
  • 3 tablespoons Green Chili Powder or to taste
  • Diced Green Chilis to taste

Instructions

  • Preheat oven to 325°F.
  • Place all the ingredients in a stainless bowl. Mix well.
  • Transfer to a roasting pan with a tight lid. Cover.
  • Place in preheated oven. Cook for 3 1/2 - 4 hours.
  • Remove from oven and allow to cool enough to touch.
  • With a slotted spoon or spider strainer, remove solids to a cutting board or large bowl. Reserve juice that the meat was cooked.
  • Shred meat and any onion or chili pieces using 2 forks. Place shredded meat into a new bowl, if working on a cutting board.
  • Strain juice in skim off fat. Add about 1 1/2 cups juice to shredded meat. Discard remained of juice.
  • Mix in green chilies, to taste.
  • Serve hot.
