- 16 ounces Angel Hair or other thin Pasta
- 4 tablespoons Extra Virgin Olive Oil
- 2 cloves Garlic finely diced
- 1 cup diced Roma Tomatoes
- 1/2 cup finely diced Black Olives
- 1/4 cup Capers
- 8 ounces jarred Artichoke Hearts cut in 1/2 or 1/4
- 1/4 cup White Wine
- Parsley chopped fine, to garnish
Prepare pasta according to package directions. Drain. Set aside.
Pour olive oil into a medium skillet. Place over medium heat.
When oil is hot and shimmering, add garlic. Sauté until garlic becomes fragrant.
Add tomatoes, olives, capers, artichokes and white wine. Sauté until wine is reduced, about 2 - 3 minutes.
Place pasta into a serving dish or individual serving plates. Top with sauce.
Sprinkle with parsley, to garish.
