- One 9-inch Pie Crust or Shell store bought or homemade
- 4 Eggs
- 1/2 cup Sugar
- 1 cup Light Corn Syrup
- 1/4 cup melted Butter
- 1 teaspoon Vanilla Extract
- 2 tablespoons Dark Rum
- 1 cup coarsely chopped Pecans
- 1 cup chopped Dates
- Whipped Cream to serve
Preheat oven to 375°F.
Place eggs into a medium bowl. Beat well.
Add sugar, corn syrup, butter, vanilla and rum. Beat with a whisk until well-combined.
Stir in pecans and dates. Mix well.
Turn mixture out into unbaked pie shell.
Place in preheated oven. Bake about 40 minutes, or until filling is set in center when pie is gently shaken.
Remove pie from oven. Cool completely on a wire rack. Slightly chill before serving. Top pie slices with whipped cream when serving.
