Ingredients

  • 5 pounds Yams peeled, cut into 2-inch dice (If yams are not available sweet potatoes may be substituted.)
  • 2 quarts hot Water
  • 1 tablespoon Salt
  • 8 ounces Butter cold, cut into 1/2-inch dice
  • 1 1/2 teaspoon ground Cinnamon
  • 1/4 teaspoon freshly ground White Pepper
  • 1/2 cup Brown Sugar
  • Parsley Leaves chopped, to garnish
  • Malanga Chips (Recipe below or Fried Plantain Chips, store bought or homemade)

Instructions

  • Place prepared yams in a large stockpot.
  • Add hot water and salt.
  • Place stockpot on the stove over medium heat. Bring to a boil. Cook for 35 minutes, or until an inserted fork in the yam pierces easily.
  • Remove from heat. Drain water from the yams and transfer them into a mixing bowl.
  • Using a wire whisk, mash until yams are broken up.
  • Add diced cold butter, ground cinnamon, white pepper and brown sugar. Mix again until the yams are smooth and all of the ingredients are mixed evenly. If needed, season with additional salt to taste.
  • Place the cinnamon yam mash on a large serving platter.
  • Garnish with fried malanga chips or plantains and chopped parsley.
