Ingredients

  • 2 ounces Fettuccine
  • 1 1/2 teaspoons Olive Oil/Vegetable Oil Blend
  • 4 1/2 ounces raw Shrimp cleaned, peeled, deveined and tails removed
  • 2 cloves Garlic chopped
  • 1 1/2 ounce White Wine
  • 1 tablespoon unsalted Butter
  • 8 ounces Zucchini sliced into thin ribbons and blanched
  • 1/4 teaspoon Salt
  • 1/4 teaspoon freshly ground Black Pepper to taste
  • 2 teaspoons chopped fresh Parsley
  • 1/8 cup grated Parmesan Cheese
  • Grated Parmesan Cheese to serve

Instructions

  • Prepare pasta according to package directions. Drain. Set aside.
  • Add oil blend to a sauté pan. Place over medium heat.
  • When hot, add shrimp. Sauté until pink. Remove and set aside.
  • Add garlic to pan. Sauté 1 minute.
  • Stir in wine and butter. Bring to a simmer.
  • Add zucchini, salt and pepper. Steam until al dente.
  • Return shrimp to pan.
  • Add cooked fettuccine. Toss to combine.
  • Add 1/8 cup Parmesan cheese. Toss again.
  • Transfer pasta to plate. Sprinkle more Parmesan cheese on top.
  • Serve hot.
