J. Gilbert's Maytag Blue Cheese Potato Chips Recipe

Ingredients

Blue Cheese Sauce

  • 1 tablespoon Flour
  • 1 tablespoon Unsalted Butter
  • 1/2 cup cold Whole Milk
  • 1/8 teaspoon coarsely ground Black Pepper
  • 4 ounces Maytag Blue Cheese or other Blue Cheese, of choice

Chips and Garnish

  • 14 ounces any brand Kettle-Cooked Olive Oil Potato Chips or other thickly cut Chips of choice (In our experience, unflavored, salt-only chips work the best - but be sure to experiment with flavors and let everyone know if you come up with a winner by leaving a comment below.)
  • Chives snipped into rings

Instructions

  • Preheat oven to 350°F.

Blue Cheese Sauce

  • In a 2-quart saucepan combine flour and butter. Place saucepan over medium heat.
  • Whisk mixture as the butter melts to break up lumps. Cook for about 30 seconds, until mixture is smooth and reaches a simmer.
  • Slowly add in cold milk, whisking constantly to prevent sticking and keep it smooth.
  • Bring mixture to a simmer. Continue to cook until the mixture thickens.
  • Reduce heat to low.
  • Crumble in blue cheese. Add black pepper. Whisk until mixture is smooth.
  • Increase heat to medium. Bring mixture to a simmer, whisking often. Continue to simmer until mixture thickens enough to coat the back of a wooden spoon.
  • Transfer mixture to a heatproof jar or container. Set aside to cool for a few minutes. Stir before using.

Serve

  • Warm potato chips in preheated oven on a couple rimmed baking sheets for several minutes just before plating.
  • Place warmed chips on the platter or large plate.
  • Drizzle warm blue cheese sauce over top. Sprinkle with chives.
  • This dish cools and deteriorates rapidly. Serve immediately. Serving smaller batches more frequently, rather than one large portion, will produce the best results. Warm sauce in microwave before using, if it has cooled.
