Dinosaur Bar-B-Que Mutha Sauce

Make this Straight-From-the-Restaurant Dinosaur Bar-B-Que Mutha Sauce Recipe at home. This is a delicious sauce on it's own, but, as the name implies, it is also the base all Dinosaur Bar-B-Que sauces and a good starting point for your own sauce-creating experiments.

Ingredients

  • 1/4 cup Vegetable Oil
  • 1 cup minced Onion
  • 1/2 cup minced Green Pepper
  • 1 Jalapeño Pepper seeded and minced
  • 1 pinch Kosher Salt
  • 1 pinch freshly ground Black Pepper to taste
  • 2 tablespoons minced Garlic
  • One 28-ounce can Tomato Sauce
  • 2 cups Heinz Ketchup preferably, or other Ketchup, of choice
  • 1 cup Water
  • 3/4 cup Worcestershire Sauce
  • 1/2 cup Cider Vinegar
  • 1/4 cup freshly squeezed Lemon Juice
  • 1/4 cup Molasses
  • 1/4 cup Cayenne Pepper Sauce
  • 1/4 cup Spicy Brown Mustard
  • 3/4 cup Dark Brown Sugar packed
  • 1 tablespoon Chili Powder
  • 2 teaspoons fresh coarsely ground Black Pepper
  • 1/2 teaspoon Ground Allspice
  • 1 tablespoon Liquid Smoke optional

Instructions

  • Pour the oil into a large saucepan. Place over medium-high heat.
  • When oil is hot and shimmering, add onion, green pepper and jalapeño. Stir to mix.
  • Add a pinch of salt and pepper. Cook until vegetables are soft and onions are golden.
  • Add garlic. Cook for 1 minute more.
  • Add all remaining ingredients, except Liquid Smoke.
  • Bring to a boil. Then lower heat until sauce simmers. Simmer for 10 minutes.
  • Turn off heat. Add Liquid Smoke.
  • Store in a tightly sealed container, in the refrigerator, until ready to use.
