Ingredients

Steaks

  • Four 10 - 12-ounce Strip Steaks
  • 1 cup Mojito Marinade store bought or homemade

Dinosaur Bar-B-Que Churrasco Steak Sauce

  • 1 medium bunch fresh Italian Parsley
  • 10 - 12 large cloves Garlic coarsely chopped
  • 3 - 4 tablespoons freshly squeezed Lemon Juice
  • 1 teaspoon Red Pepper Flakes
  • 2 teaspoons Salt
  • 1 teaspoon ground Cumin
  • 1 teaspoon dried Oregano
  • 1 cup Extra Virgin Olive Oil

Instructions

Steaks

  • Remove the bootstrap tendon sometimes found on the outside edge of the steaks, so they won't curl when you cook them.
  • Place steaks into a large shallow dish.
  • Pour marinade over steaks. Turn to coat.
  • Store, covered, in the refrigerator, overnight to marinate.

Dinosaur Bar-B-Que Churrasco Steak Sauce

  • Pick off the parsley leaves to make a packed cup.
  • Put the leaves in a food processor or blender.
  • Add garlic, lemon juice, red pepper flakes, salt, cumin and oregano. Process to a paste, scraping down the bowl several times.
  • With the processor running, slowly dribble in the olive oil until fully blended. Set aside.

Grill

  • Remove the steaks from the marinade. Pat dry.
  • Place on grill over hot coals. Grill until medium rare, or to your desired doneness (see chart below).
  • When done, place steaks on serving plates.
  • Spoon Dinosaur Bar-B-Que Churrasco Steak Sauce over each steak.
  • Serve hot.
