Steaks
- Four 10 - 12-ounce Strip Steaks
- 1 cup Mojito Marinade store bought or homemade
Dinosaur Bar-B-Que Churrasco Steak Sauce
- 1 medium bunch fresh Italian Parsley
- 10 - 12 large cloves Garlic coarsely chopped
- 3 - 4 tablespoons freshly squeezed Lemon Juice
- 1 teaspoon Red Pepper Flakes
- 2 teaspoons Salt
- 1 teaspoon ground Cumin
- 1 teaspoon dried Oregano
- 1 cup Extra Virgin Olive Oil
Steaks
Remove the bootstrap tendon sometimes found on the outside edge of the steaks, so they won't curl when you cook them.
Place steaks into a large shallow dish.
Pour marinade over steaks. Turn to coat.
Store, covered, in the refrigerator, overnight to marinate.
Dinosaur Bar-B-Que Churrasco Steak Sauce
Pick off the parsley leaves to make a packed cup.
Put the leaves in a food processor or blender.
Add garlic, lemon juice, red pepper flakes, salt, cumin and oregano. Process to a paste, scraping down the bowl several times.
With the processor running, slowly dribble in the olive oil until fully blended. Set aside.
Grill
Remove the steaks from the marinade. Pat dry.
Place on grill over hot coals. Grill until medium rare, or to your desired doneness (see chart below).
When done, place steaks on serving plates.
Spoon Dinosaur Bar-B-Que Churrasco Steak Sauce over each steak.
Serve hot.
