- 1/4 cup Extra Virgin Olive Oil
- 1/2 teaspoon Salt
- 2 cloves Garlic minced or pressed
- 1/2 pound Plum or Roma Tomatoes sliced thinly
- Two 12-inch prepared Pizza Crusts store bought or homemade
- 2 cups Marinara Sauce of choice, store bought or homemade
- 16 ounces Mozzarella Cheese shredded or balls, cut into small pieces
- 1/2 cup freshly grated Parmesan Cheese
- 12 fresh Basil Leaves cut in strips
In a small bowl, combine olive oil, salt and garlic. Mix well.
Add sliced tomatoes and toss gently to coat. Set aside to marinate at least 15 minutes.
Preheat oven to 400°F.
Brush both pizza shells with oil from the garlic mixture.
Pour 1 cup of marinara sauce onto each pizza crust. Spread evenly.
Top each with 1/2 of the mozzarella (spreading the pieces evenly if using cut mozzarella balls) and Parmesan cheeses.
Spread the marinated tomatoes evenly over the pizzas.
Bake in a preheated oven according to shell package directions or for about 10 minutes until cheese is melted and crust is golden.
Remove from oven.
Scatter the basil strips over both pizzas.
Allow to cool for 5 minutes before slicing.
Serve hot.
