- 1 1/2 ounces Canola Oil
- 6 ounces Chicken Chorizo grilled, cut into small pieces
- 4 ounces Chicken Breast grilled, sliced thin
- 4 ounces diced Red and Yellow Bell Peppers
- 2 ounces Poblano Peppers roasted, peeled, cut into small pieces
- 8 ounces small Red Potatoes cooked, small diced
- 2 ounces fresh Corn lightly grilled
- 1 ounce freshly chopped Green Onions
- 4 ounces bottled Ranchero Sauce
- Four 6-inch Corn Tortillas fried crisp
- 4 Eggs prepared to your preference
- 4 ounces Hollandaise Sauce store bought or homemade
- 2 teaspoons finely chopped fresh Cilantro
Place a sauté pan over medium high heat. Add oil and heat until hot and shimmering.
Add chorizo, sliced grilled chicken, poblano peppers and bell peppers. Sauté, tossing once or twice to combine ingredients, until heated through.
Add potatoes, corn and onions. Sauté, tossing once or twice to combine, until heated through.
Add ranchero sauce. Stir to combine.
Place one crispy tortilla onto each serving plate.
Place equal amounts of the chicken hash on top of each tortilla. Top each tortilla/hash portion with a cooked egg.
Ladle a little hollandaise over each of the eggs.
Garnish with chopped cilantro.
