Ingredients

  • 12 ounces Beef Ravioli store bought or homemade
  • 4 tablespoons unsalted Butter
  • 1 Roasted Sweet Potato (Recipe below)
  • 14 Sage Leaves
  • 4 ounces Chicken Stock
  • 2 tablespoons White Wine Vinegar
  • 2 ounces Heavy Cream
  • 2 tablespoons unsalted Butter
  • Salt and freshly ground Black Pepper to taste
  • Grated Parmigiano-Reggiano for serving
  • Fresh Parsley chopped, for garnish

Instructions

  • Prepare Roasted Sweet Potato according to recipe below.
  • Prepare pasta according to package directions. Drain. Set aside.
  • In a large sauté pan, gently heat 4 tablespoons unsalted Butter until it melts and begins to brown slightly.
  • Add roasted sweet potato cubes and sage. Heat through.
  • Add chicken stock, vinegar and cream. Bring to a simmer and reduce to sauce consistency.
  • Add 2 tablespoons unsalted Butter. Stir continuously until fully melted.
  • Taste. Add salt and pepper, to taste.
  • Add prepared ravioli to sauté pan. Cook 20 seconds.
  • Spoon ravioli onto serving plates.
  • Top with remaining sauce. Sprinkle with grated Parmigiano-Reggiano and parsley.
  • Serve hot.
