- 12 ounces Beef Ravioli store bought or homemade
- 4 tablespoons unsalted Butter
- 1 Roasted Sweet Potato (Recipe below)
- 14 Sage Leaves
- 4 ounces Chicken Stock
- 2 tablespoons White Wine Vinegar
- 2 ounces Heavy Cream
- 2 tablespoons unsalted Butter
- Salt and freshly ground Black Pepper to taste
- Grated Parmigiano-Reggiano for serving
- Fresh Parsley chopped, for garnish
Prepare Roasted Sweet Potato according to recipe below.
Prepare pasta according to package directions. Drain. Set aside.
In a large sauté pan, gently heat 4 tablespoons unsalted Butter until it melts and begins to brown slightly.
Add roasted sweet potato cubes and sage. Heat through.
Add chicken stock, vinegar and cream. Bring to a simmer and reduce to sauce consistency.
Add 2 tablespoons unsalted Butter. Stir continuously until fully melted.
Taste. Add salt and pepper, to taste.
Add prepared ravioli to sauté pan. Cook 20 seconds.
Spoon ravioli onto serving plates.
Top with remaining sauce. Sprinkle with grated Parmigiano-Reggiano and parsley.
Serve hot.
