Ingredients

  • 1 quart Oil for frying
  • 2 Eggs slightly beaten
  • 1/2 cup Milk
  • 1/2 Onion chopped
  • 1/2 Red Bell Pepper chopped
  • 2 cups chopped Conch Meat
  • 1 tablespoon fresh Thyme chopped
  • 1 tablespoon fresh Parsley chopped
  • 2 cups Bread Crumbs
  • 1 cup All-Purpose Flour
  • Salt and freshly ground Black Pepper to taste
  • 1 tablespoon Double-Acting Baking Powder
  • Lime Wedges for serving

Instructions

  • In a large pot or deep fryer, heat oil to 365°F.
  • Add eggs, milk, onion, bell pepper, conch meat thyme and parley to a large mixing bowl. Mix well.
  • In another mixing bowl, add bread crumbs, flour, salt and pepper and baking powder. Mix well.
  • Pour bread crumb mixture into conch mixture. Mix very well to a nice stiff batter.
  • Using a tablespoon or scoop, drop a few dollops of batter into hot oil. Do not crowd.
  • Fry until golden brown, about 90 seconds.
  • Remove from oil with a spider-strainer, slotted spoon or tongs. Place on a paper towel-covered plate to drain.
  • Repeat until all batter is used.
  • Serve with lime wedges, Bahama Breeze Spicy Conch Dipping Sauce and Bahama Breeze Citrus Mustard Dipping Sauce.
