Cut potatoes into curly fries using a curly fry cutter, or cut potatoes into regular fries.
Preheat the oven to 450°F.
Bring a large pot of water to a boil over high heat.
Add 1 teaspoon salt.
Put potatoes in boiling water and boil for 3 minutes.
Rinse potatoes off in a colander with cold water. Dry potatoes with paper towels. Set aside to cool for about 5 minutes.
Lightly mist a small nonstick baking sheet with oil spray. Set aside.
In a large mixing bowl, combine egg substitute, flour, paprika, cayenne, garlic powder, onion powder and the remaining 3/4 teaspoon salt. Mix well.
Place dried and cooled potatoes into spice mixture. Toss until they are coated fully.
Transfer potatoes, shaking off excess seasoning mixture, to the reserved baking sheet. Arrange potatoes, not touching, in a single layer.
Lightly mist with oil spray.
Bake for 18 to 24 minutes, flipping every ten minutes so they become nice and crispy.
