Ingredients

  • 1/4 cup Butter melted
  • 3 quarts Cuban Bread cut into 1-inch cubes
  • 2 1/2 cups Eggs
  • 1 1/4 cups Sugar
  • 5 cups Milk
  • 1 tablespoon Vanilla Extract
  • 1/2 cup Coconut Rum
  • 1/2 cup shredded Coconut
  • 1/2 cup canned Pineapple diced

Instructions

  • Prepare Bahama Breeze Coconut Créme Anglaise according to recipe below, allowing time to chill.
  • Preheat oven to 350°F.
  • Toss 3 tablespoons melted butter with the Cuban bread cubes.
  • Place cubes on a sheet pan.
  • Place pan in oven. Toast until golden. Remove from oven and turn oven down to 300°F.
  • Brush a medium-sized casserole dish with 1 tablespoon of melted butter.
  • Add toasted bread cubes, spreading to cover bottom evenly.
  • Mix all the remaining ingredients, including remaining butter, together. Pour mixture over the bread cubes. Press down on the bread cubes until they absorb most of the liquid.
  • Place in 300°F oven and bake for 1 hour or until firm in the center.
  • Serve warm with Vanilla Ice Cream and Bahama Breeze Coconut Créme Anglaise to pour over.
