- 1/2 pound Chicken or 2 Chicken Breasts
- Vegetable Oil or Olive Oil
- Freshly squeezed Juice of 1 Lime
- 2 tablespoons dried Red Pepper Flakes
- 2 cloves Garlic minced
- 1 can Black Beans drained and rinsed
- Whole Wheat Tortillas as needed
- One 8-ounce bag Mexican-Blend Shredded Cheese
- Salsa as needed, store bought or homemade
- 1 bunch Fresh Cilantro chopped
Cut up the chicken into small pieces.
Add enough oil to cover the bottom of a small skillet. Place over medium heat.
When oil is hot, add lime juice, red pepper flakes and garlic.
Sauté chicken in the oil until it starts to turn light brown. Remove the chicken from the skillet. Set aside.
Heat black beans in the skillet with the used oil. Alternately, heat them in the microwave.
When Ready to Serve
Place a tortilla on a microwave-safe plate.
Sprinkle about 2 tablespoons shredded cheese onto tortilla.
Place tortilla in the microwave and heat for 10 - 15 seconds until cheese is melted.
Top with cooked chicken, warm black beans, salsa and cilantro. Wrap up into a burrito shape.
Serve with sauce and/or salsa, of choice, if desired.
