KFC Grilled Chicken

Ingredients

  • 1 Whole Chicken, cut into 8 pieces or 8 Chicken Pieces of your choice

Marinade/Brine

  • 8 cups Water
  • 1/4 cup Salt
  • 2 teaspoons Accent Flavor Enhancer

Glaze

  • 1/4 cup Vegetable Oil
  • 1 teaspoon Liquid Smoke
  • 1 teaspoon Soy Sauce

Dry Rub/Seasoning Mix

  • 2 teaspoons All-Purpose Flour
  • 1/4 teaspoon Salt
  • 3/4 teaspoon Chicken Bouillon Powder or Chicken Soup Base
  • 1/4 teaspoon Beef Bouillon Powder or Beef Soup Base
  • 1/4 teaspoon dried Marjoram
  • 1/4 teaspoon freshly ground Black Pepper
  • 1/4 teaspoon crushed dried Rosemary
  • 1/4 teaspoon dried Basil
  • 1/8 teaspoon dried Oregano
  • 1/8 teaspoon Garlic Powder




Directions

Marinade

  1. Add water to a pot large enough to hold all of the chicken.
  2. Dissolve the salt and Accent in the water.
  3. Add the chicken pieces, making sure they are all fully covered with water.
  4. Place the pot in the refrigerator and chill for about 2 hours.
  5. When chicken has marinated, remove each piece, rinse quickly with water and blot dry with paper towels.
  6. Place the pieces on a cookie sheet.

Glaze

  1. In a small bowl, whisk together oil, liquid smoke and soy sauce in a small bowl.
  2. Brush oil mixture over one side of each piece of chicken.
  3. Flip the pieces and oil the other sides.

Season

  1. Combine all the Dry Rub/Seasoning Mix ingredients in a small bowl.
  2. Liberally sprinkle seasoning over each piece of chicken.
  3. Carefully flip the pieces and season the other sides.

Cook

  1. Grill indoors or outdoors for approximately 5-10 minutes per side or until cooked through.
  2. Cover with foil and allow to rest for 15 minutes before serving.

Or

  1. Preheat your oven to 350°F
  2. Brush some of the leftover oil solution onto an oven-safe grill pan or grill plate.
  3. Set pan over med-heat and when the oil begins to smoke, carefully place chicken skin-side-down on the pan.
  4. Cook chicken 2-3 minutes or until the skin begins to brown and grill marks form on the chicken, then flip chicken and cook another 1-2 minutes.
  5. Pop the grill pan into the oven for 20 minutes, then flip each piece of chicken and bake another 20 minutes or until the surface of the chicken is golden brown and the chicken is cooked through.
  6. Cover with foil and allow to rest for 15 minutes before serving.
