    Absolutely delicious! I wonder why my pineapple went to bottom of pan. I bet I should have used crushed instead of tidbits but was following recipe exactly. Will try next time….believe me there will be a next time!

    It’s very close but they left out the most important part. J Alexander’s will tell you that the true “secret” is before they put the icing on the cake they prick holes in the cake and pour a warm simple syrup over the cake to make it super moist then they put the icing on it before they serve it.

    I forgot exactly what J. Alexanders’ carrot cake tastes like, because it’s been almost 10 years since I’ve had it.

    With that being said…I just made this, and its one of the best carrot cakes I’ve ever had. I took the advice of Benita and made a simple syrup to moisten the cake before putting the frosting on, and I’m glad I did.

    I used to work there- there are not raisins in their recipe or walnuts- its actually pecans. And there is also not any pineapples-its coconut flakes. This recipe is probably delicious- but it is not the J Alexander’s carrot cake recipe.

      I used to work there in 2009 and they definitely had pineapple in the recipe! Perhaps they change the recipe? I worked at J Alexanders for 10 years and all the years I was there, the recipe included pineapple!

    Comments are accurate – except that this recipe was good. It is nothing like the restaurant. If you want the real recipe, google “Sun Sentinel Carrot Cake takes a buttermilk bath”. The copycat recipe is no comparison. No raisons, no pineapple tidbits, no walnuts. Yes, syrup is key. Yes, crushed pineapple. Yes, pecans & coconut.

    Not good! It taste like the Fruity Pebbles cereal when you eat it 🙁

      I’m with you Vega. I made it exactly and it doesn’t look anything like the picture. Mine came out more tan and the pineapples don’t enhance the recipe. Where is the simple syrup recipe? Maybe that will help. Really bummed.
