Hard Rock Cafe Baby Rock Watermelon Ribs

Hard Rock Cafe Watermelon BBQ Sauce

  • Watermelon Rind from about 1/2 of a small Watermelon
  • 1 cup Dark Corn Syrup
  • 1/2 cup Water
  • 1/4 cup Ketchup
  • 1/4 cup distilled White Vinegar
  • 3/4 teaspoon crushed Red Pepper Flakes
  • 1/2 teaspoon Liquid Smoke
  • 1/4 teaspoon freshly ground Black Pepper


  • 4 pounds of Baby Back Ribs


Hard Rock Cafe Watermelon BBQ Sauce

  1. Cut off the green skin of the watermelon rind and about 1/2 inch of the hard white part, keeping the part that is lighter red to white. This is the tender part that you want. (Avoid the harder, white part that is just inside the green skin.)
  2. Cut the trimmed rind into chunks and puree in a blender or food processor for about 10 seconds.
  3. Strain the liquid from the pulp and measure 1 cup of strained pulp.
  4. In a saucepan combine the 1 cup of strained pulp with dark corn syrup, water, ketchup, red pepper flakes, liquid smoke and black pepper and bring to a boil over high heat.
  5. Immediately reduce heat and simmer, covered, for about 1 hour or until the sauce has reached desired thickness.


  1. Place the ribs and 1/2 of the Hard Rock Cafe Watermelon Barbecue Sauce you have just made in a large sealable plastic back and marinate ribs for at least two hours – or up to overnight – in the refrigerator.
  2. Divide the remaining sauce in 2.  Save in the refrigerator to use 1/2 for basting at grilling time and 1/2 for dipping at the table.
  3. Wrapped the marinated ribs in foil, and bake in the oven at 300°F for 2 to 2 1/2 hours or until ribs are very tender and the rib meat begins to pull back from the cut ends of the bone.
  4. Remove ribs from foil and place on grill, brushing with reserved marinade.  Grill for about 2 to 4 minutes per side. Finished ribs should be slightly charred, but not burned.
  5. Serve with reserved dipping Hard Rock Cafe Watermelon Barbecue Sauce at the table.
