Cracker Barrel Double Chocolate Fudge Coca-Cola Cake was a mistake.

Coke-based recipes for savory dishes like crock pot stews and roasts are not that unusual, especially in the South.  And the Coca Cola Cake has been a staple at church socials, potlucks and family reunions for years.

Cracker Barrel and Coca Cola are both located in the South so it made sense to serve Coke in the Cracker Barrel restaurants and to incorporate it into as many dishes as possible.  This is what their product development team was doing in 1997 when their most-fortunate mistake occurred.

They had gotten a traditional recipe for Coca Cola Cake and were working with it when the the cooks made a mathematical error.  As they scaled up the recipe, they more than doubled the cocoa.  And, just like that, Cracker Barrel’s Double Chocolate Fudge Coca-Cola Cake was born.

“The error they made was so delicious that we didn’t want to change a thing,” says project manager Susan Gillituk.

Originally, the dessert was offered for limited periods and, during off times, fans would write letters and call to request it. Then, in 2009, as a 40th anniversary special, the company made the Coca-Cola Cake available for the entire year.

Last year, Cracker Barrel purchased enough batter to make 2,286,432 pieces of Double Chocolate Fudge Coca-Cola Cake for their 622 restaurants in 42 states.  (With advance notice, customers can order entire Coca-Cola Cakes instead of single slices too, an option that the company considered discontinuing but kept amidst protests from the individual restaurants who saw demand.)

Coca Cola Cake has become Cracker Barrel’s Signature Dish.  “There was a time when the mention of Cracker Barrel immediately made people think of breakfast,” says Gillituk. “Today people think of the Coca-Cola Cake.”

The recipe remains a protected secret, but it does include real Coke — not Coke syrup — poured from 2-liter bottles.

Ingredients

Cake

• 1 cup Coca-Cola
• 1/2 cup Oil
• 1/2 cup Margarine
• 3 tablespoons Cocoa Powder
• 2 cups Sugar
• 2 cups Flour
• 1/2 teaspoon Salt
• 2 Eggs
• 1/2 cup Buttermilk
• 1 teaspoon Baking Soda
• 1 teaspoon Vanilla

Frosting

• 1/4 pound Margarine
• 3 tablespoons Cocoa
• 6 tablespoons Cream or 6 tablespoons Milk
• 1 teaspoon Vanilla
• 1/2 cup Pecans chopped (optional)
• 1 pound Confectioners' Sugar

Instructions

Cake

• In a sauce pan, bring Coca-Cola, oil, margarine, and cocoa to a boil.
• In a separate bowl, mix the sugar, flour and salt and pour in the boiling liquid and beat well.
• Add the eggs, buttermilk, soda and vanilla and beat well.
• Pour into a greased and floured sheet cake pan, and bake at 350°F for 20 - 25 minutes.

Frosting

• In a saucepan, combine the butter cocoa, and milk and heat until the butter melts.
• Beat in the remaining ingredients.
• Spread on the hot cake.
• Cool and cut.
• Serve topped with natural vanilla bean ice cream.
